Preparation and Properties of Colostrum-Containing Chewable Tablets
Abstract
In this study, chewable tablets containing colostrum were manufactured, and the physicochemical properties of the tablets, such as antioxidant activity and hardness, were investigated according to the changes in the contents of colostrum powder and citrus concentrate. The hardness of the chewable tablet increased as the moisture content of the granules for tablet manufacturing increased and decreased as the particle size increased, but there was no change in the hardness of the tablet according to the changes in the contents of colostrum powder and citrus concentrate. The DPPH radical scavenging activity and ABTS radical scavenging activity of pure colostrum powder and citrus concentrate were insignificant, but when colostrum powder and citrus concentrate were added separately, both DPPH radical scavenging activity and ABTS radical scavenging activity increased due to the interaction with the components constituting the chewable tablet. In particular, chewable tablets containing both colostrum powder and citrus concentrate showed greater DPPH radical scavenging activity and ABTS radical scavenging activity as well as an enhanced effect of NO production. As the content of citrus concentrate increased, regardless of the content of colostrum powder, the ABTS radical scavenging activity increased. However, when the content of citrus concentrate was constant, there was an optimal content of colostrum powder at which the ABTS radical scavenging activity was maximized.
